I can translate French to English, but I don’t know what software to use to make subs.

Utilise Aegisub : http://www.aegisub.org/

Tu ouvre le fichier .ASS (ou .SRT) avec Aegisub, et tu remplace les lignes en français par ta traduction en anglais.
c’est tout simple ^^

As mentioned, Aegisub works well. If you need help with it, just ask, I’m a newbie to it too, but I found once you figure out the hotkeys (especially the ones for editing based on the video instead of the audio which doesn’t work well for Gaki where they talk over each other etc.) it gets easier. If you have a .ASS, .SRT or .TXT subtitle file to work from though its even easier. No hotkeys required, just selecting lines and editing the text.
Alternatively with a subtitle file you can edit stuff in a simple text editor like Notepad and may not even need to touch Aegisub. You just ignore the sub styles like the "Dialogue 000 , {pos alpha}" and edit whats actually being said.

e.g. all the stuff highlighted in blue.

But maybe because I’m used to looking at lines of code in the past thats easier for me, in which case just open the .ASS etc. in Aegisub as mentioned. :D

By the way, I was converting a couple French hardsub episodes to English by transcribing then using a mixture of Google Translate, MyMemory Translate and some online dictionaries etc. The results are OK but if you wouldn’t mind proof-checking the French-English that’d be cool (it’d just be a case of comparing the dialogue since I have it all styled and timed, though like I say, I’m a noob with Aegisub so here’s hoping I did alright :rofl: ). I thought I’d wait though for permission from the original French subber Razuberii before I’ll publish anything.

Sure, soudou. I’d love to help that way. Also I can understand some Japanese, so watching the original video helps too. :)

I was also thinking of subbing the Yamasaki tummy ache clip from the best of 2010 ep, since the Japanese seems reasonable (edit = easy). I guess I’d have to work out timing for that one. New skills to learn!
